3 small tortillas (Size 8 inch/22cm or ~40g per wrap)
Additional fillings as desired (For example - chopped capsicum, baby spinach leaves)
To cook the quesadillas: Spread the bean mixture evenly over each tortilla. Put any fillings you want on 1 half of the wrap and top with cheese (still on only one side).
Warm a medium-to-large skillet over medium heat.
Transfer one tortilla to the warmed skillet. Once the cheese is melting, fold the non cheese side over onto the cheese side. Let each side cook until golden and crisp, flipping as necessary. Transfer the cooked quesadilla to a plate, and repeat for remaining quesadillas.
