bbq jackfruit burgers

  • 2 big cans (~565g) green jackfruit (drained, rinsed and chopped)

  • Splash of oil

  • 2 heaped teaspoons minced garlic (Jarred)

  • 1/2 cup vegetable broth or water

  • 1/4 teaspoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

  • 1/4 teaspoon salt

  • bbq sauce

Prepare the jackfruit - use a fork to shred the soft part of the jackfruit. Press down with the fork on the harder ends to shred it. If some parts are too hard they can be discarded.

Cook the jackfruit: Heat the oil in a large skillet over medium-high heat. When hot, add the garlic and jackfruit, and all the spices to the pot and fry for a few minutes. Add broth, reduce heat and let it simmer until the jackfruit softens. About 5 minutes.

Now take a potato masher, and smash all the jackfruit up to get that shredded texture. If you find it a bit wet, just cook a little longer. If you find it a little dry, just add a splash water.

Add some squirts of bbq sauce until it is flavoured to your liking.
