tofu 'mince'

  • 300g block of firm tofu

  • 1 tablespoon oil

  • 1 tablespoon soy sauce

  • 1 teaspoon Jerk seasoning (Leave out if using pre-flavoured sauces, or want to add flavours, when using in a dish)

Preheat your oven to 350F (180C). Line with parchment paper a large baking sheet.

Crumble the block of tofu with your fingers or a fork into the bowl. Mix the tofu crumbles with the seasoning, oil and soy sauce making sure all of the tofu is evenly coated.

Spread the tofu crumbles evenly over the pan. Bake for 30ish minutes, stopping to stir the tofu every now and then.

Keep a close eye on it towards the end so that it doesn't burn. You want the tofu to be nice and brown. The smaller crumbles will be darker than the larger crumbles, and that's ok because it will provide a variety of textures.

Uses: In lasagne and other mince dishes.
